This Overnight Croissant Breakfast Casserole is the ultimate make-ahead holiday brunch recipe. With flaky croissants, savory turkey sausage, and melted cheese, it delivers satisfying flavor with minimal morning prep.
Ingredients
6 large croissants (day-old preferred)
1 pound turkey sausage, cooked and crumbled
1 1/2 cups shredded cheddar cheese
1 cup shredded mozzarella cheese
8 large eggs
2 cups milk or unsweetened almond milk
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried thyme
1/4 teaspoon ground black pepper
Olive oil or spray for greasing
Instructions
1. Grease a 9×13 inch baking dish with olive oil or cooking spray.
2. Tear croissants into 2-inch pieces and spread evenly in the dish.
3. Layer the cooked, crumbled turkey sausage over the croissants.
4. Sprinkle cheddar and mozzarella evenly over the sausage.
5. In a mixing bowl, whisk together eggs, milk, garlic powder, onion powder, thyme, and pepper.
6. Pour the egg mixture evenly over the layers in the baking dish.
7. Cover with foil and refrigerate overnight (or at least 6 hours).
8. Preheat the oven to 375°F (190°C).
9. Remove foil and bake for 40–45 minutes, or until the center is set and the top is golden brown.
10. Let rest for 10 minutes before slicing and serving.
Notes
Use slightly stale croissants for better texture absorption.
Substitute vegan sausage or mushrooms for a vegetarian version.
Store leftovers in an airtight container in the fridge for up to 4 days.
