Description
Light, refreshing, and elegant cucumber sandwiches perfect for tea parties, brunches, or a quick summer snack. Soft bread layered with creamy herbed spread and crisp cucumber slices.
Ingredients
8 slices white or whole wheat sandwich bread, crusts removed
1 large cucumber, thinly sliced
4 oz cream cheese, softened
2 tbsp mayonnaise
1 tbsp fresh dill, chopped
1 tbsp fresh chives, chopped
1/2 tsp garlic powder
Salt and black pepper, to taste
Butter, optional
Instructions
1. In a small bowl, mix cream cheese, mayonnaise, dill, chives, garlic powder, salt, and pepper until smooth.
2. If desired, lightly butter each slice of bread to prevent sogginess.
3. Spread the cream cheese mixture evenly over one side of each slice.
4. Arrange cucumber slices in a single layer over half of the bread slices.
5. Top with the remaining bread slices, cream cheese side down.
6. Gently press and cut each sandwich into halves or quarters.
7. Serve immediately or chill for 30 minutes before serving for best texture.
Notes
For extra flavor, add a sprinkle of lemon zest to the spread.
Use seeded English cucumbers for thinner skin and milder taste.
These sandwiches are best enjoyed the same day they’re made.
