Ingredients
3 cups cooked chicken, diced (rotisserie works great)
1 medium apple, diced (honeycrisp or gala)
½ cup raisins (or golden raisins)
½ cup celery, finely chopped
¼ cup red onion, finely diced
½ cup mayonnaise (or half mayo, half Greek yogurt)
2 tsp curry powder
1 tsp honey or maple syrup (optional)
1 tbsp lemon juice
Salt & black pepper, to taste
Fresh parsley or cilantro, chopped (for garnish)
Instructions
1. In a large bowl, whisk together mayonnaise, curry powder, lemon juice, honey, salt, and pepper.
2. Add chicken, apple, raisins, celery, and onion. Stir until well coated.
3. Taste and adjust seasoning—add more curry for spice or lemon for brightness.
4. Chill at least 30 minutes before serving to let flavors meld.
5. Serve on croissants, wraps, lettuce cups, or with crackers.
