Description
Elegant and indulgent coffee éclairs with creamy espresso filling and smooth glaze.
Ingredients
½ cup unsalted butter
1 cup water
1 cup all-purpose flour
4 large eggs
¼ tsp salt
2 tbsp sugar
2 cups whole milk
⅓ cup sugar
3 egg yolks
2 tbsp cornstarch
1 tbsp espresso powder
1 tsp vanilla extract
2 tbsp unsalted butter
1 cup powdered sugar
2 tbsp brewed coffee
½ tsp vanilla extract
Instructions
1. Preheat oven to 400°F and line baking trays.
2. In a saucepan, boil butter, water, salt, and sugar.
3. Add flour and stir until mixture pulls from sides.
4. Cool slightly, beat in eggs one at a time.
5. Pipe onto tray and bake 20–25 mins.
6. Warm milk with espresso powder.
7. Whisk yolks, sugar, and cornstarch.
8. Temper yolks with milk, cook till thick.
9. Add butter, vanilla; chill.
10. Mix glaze ingredients until smooth.
11. Fill éclairs with cream, top with glaze.
Notes
Ensure oven door remains shut during baking.
Cool pastry fully before filling.
Store éclairs refrigerated up to 2 days.
