Ingredients

  • 2 cloves Garlic
  • 1/2 tsp Garlic powder
  • 1 Potato, medium
  • 1/2 tsp Thyme, dried
  • 1 Yellow onion, small
  • 2 cups Chicken broth
  • 1 tbsp Baking powder
  • 1/2 tsp Black pepper
  • 1 1/3 cup Flour
  • 1 1/2 tsp Salt
  • 6 tbsp Butter, unsalted
  • 1/2 cup Cheddar cheese
  • 1 2/3 cup Whole milk
  • 2 cups Mixed vegetables, frozen

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the chicken filling by combining cooked chicken, minced garlic, garlic powder, diced potato, thyme, chopped onion, chicken broth, and frozen mixed vegetables in a large bowl.
  3. Transfer the chicken filling mixture to a lightly greased baking dish.
  4. Make the cobbler topping by mixing flour, baking powder, salt, and black pepper in another bowl. Add cubed butter and mix until crumbly.
  5. Mix in whole milk and cheddar cheese until just combined.
  6. Spoon the cobbler batter over the chicken mixture in the baking dish.
  7. Bake for 25-30 minutes until the top is golden brown and filling is bubbling.
  8. Cool for a few minutes before serving.
