- 3 cups Chicken, cooked
- 2 cloves Garlic
- 1/2 tsp Garlic powder
- 1 Potato, medium
- 1/2 tsp Thyme, dried
- 1 Yellow onion, small
- 2 cups Chicken broth
- 1 tbsp Baking powder
- 1/2 tsp Black pepper
- 1 1/3 cup Flour
- 1 1/2 tsp Salt
- 6 tbsp Butter, unsalted
- 1/2 cup Cheddar cheese
- 1 2/3 cup Whole milk
- 2 cups Mixed vegetables, frozen
Instructions
- Preheat the oven to 400°F (200°C).
- Prepare the chicken filling by combining cooked chicken, minced garlic, garlic powder, diced potato, thyme, chopped onion, chicken broth, and frozen mixed vegetables in a large bowl.
- Transfer the chicken filling mixture to a lightly greased baking dish.
- Make the cobbler topping by mixing flour, baking powder, salt, and black pepper in another bowl. Add cubed butter and mix until crumbly.
- Mix in whole milk and cheddar cheese until just combined.
- Spoon the cobbler batter over the chicken mixture in the baking dish.
- Bake for 25-30 minutes until the top is golden brown and filling is bubbling.
- Cool for a few minutes before serving.
