This easy veggie and cheese frittata is fluffy, flavorful, and endlessly customizable. Made with eggs, cheese, and your favorite vegetables, it’s perfect for breakfast, brunch, or a light dinner.
Ingredients

8 large eggs
1/4 cup milk or cream
1 cup shredded cheese (cheddar, mozzarella, feta, or your choice)
1 cup cooked vegetables (e.g., spinach, mushrooms, bell peppers, zucchini, onions)
1/2 cup diced cooked meat (optional – ham, bacon, or sausage)
2 tbsp olive oil or butter
1/2 tsp salt
1/4 tsp black pepper
Fresh herbs (optional – parsley, basil, or chives)
Instructions
1. Preheat oven to 375°F (190°C).
2. In a large bowl, whisk together eggs, milk or cream, salt, and black pepper.
3. Stir in shredded cheese, cooked vegetables, and optional cooked meat.
4. Heat olive oil or butter in an oven-safe skillet over medium heat.
5. Pour egg mixture into the skillet and cook undisturbed for 2–3 minutes until edges start to set.
6. Transfer skillet to oven and bake for 10–12 minutes, or until center is just set.
7. Remove from oven and cool slightly before slicing.
8. Top with fresh herbs and serve warm or at room temperature.
Notes
Use fully cooked and well-drained vegetables to prevent sogginess.
Feta or goat cheese adds a creamy tang, while cheddar gives sharpness.
Pairs well with toast, salad, or fresh fruit.
