Description
Light, fluffy, and irresistibly cheesy this keto-friendly cloud bread made with eggs and cheese is perfect as a low-carb sandwich base or a savory snack.
Ingredients
3 large eggs, separated
1/4 tsp cream of tartar
3 oz cream cheese, softened (or 1/2 cup shredded mozzarella)
1/4 cup grated Parmesan cheese
1/4 tsp salt
1/4 tsp garlic powder (optional)
1/4 tsp baking powder (optional for extra rise)
Instructions
1. Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
2. Separate egg whites and yolks into two clean bowls.
3. Add cream of tartar to the egg whites and beat with an electric mixer until stiff peaks form.
4. In the yolk bowl, mix in the cream cheese (or mozzarella), Parmesan, salt, and garlic powder until smooth.
5. Gently fold the yolk mixture into the whipped egg whites using a spatula — do not overmix.
6. Spoon the mixture onto the baking sheet into 6 even rounds.
7. Bake for 25–30 minutes, until golden and set.
8. Cool completely on a rack before serving or storing.
Notes
For extra flavor, sprinkle with Italian herbs or shredded cheese before baking.
Store in an airtight container in the fridge for up to 3 days or freeze for later.
