Description

A quick and easy meal that captures the flavors of traditional egg rolls without the hassle of wrapping. Perfect for weeknights!


Ingredients

  • 1 lb ground pork or chicken
  • 4 cups coleslaw mix
  • 1 tablespoon sesame oil
  • 3 green onions, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 3 tablespoons soy sauce (or coconut aminos for Whole30)
  • 1 tablespoon rice vinegar
  • Salt and pepper to taste
  • Optional: Sriracha for heat

Instructions

  1. Heat the skillet by adding one tablespoon of sesame oil in a large skillet over medium heat.
  2. Add 1 lb of ground pork or chicken, breaking it up with a spatula until browned (5-7 minutes).
  3. Stir in 2 cloves of minced garlic and 1 tablespoon of minced ginger, cooking for another minute.
  4. Mix in 4 cups of coleslaw mix, tossing well to combine.
  5. Stir in 3 tablespoons of soy sauce and 1 tablespoon of rice vinegar for flavor.
  6. Cook the mixture until the coleslaw is tender, about 3-5 minutes.
  7. Season with salt and pepper to taste.
  8. Finish by topping with sliced green onions and optional Sriracha.
  9. Serve warm and enjoy!
