- 2 large eggs
- 1 1/4 cups whole milk
- 2 tablespoons melted butter
- 1/4 teaspoon salt
- 1 tablespoon chopped fresh thyme
- 2 cups mixed wild mushrooms (cremini, shiitake, oyster), sliced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh thyme leaves
- 6–8 oz brie, sliced (rind trimmed if desired)
- 2 tablespoons grated parmesan (optional)
Instructions
- Make the crepe batter by whisking together flour, eggs, milk, melted butter, salt, and thyme until smooth.
- Let the batter rest for 20 minutes at room temperature.
- Heat a non-stick skillet over medium heat.
- Pour in a thin layer of batter and cook for 1–2 minutes until golden.
- Flip the crepe and cook for another 30 seconds, then remove and repeat with the remaining batter.
- Heat butter and olive oil in a separate skillet over medium heat.
- Add wild mushrooms and sauté for 5–7 minutes until caramelized.
- Stir in garlic, thyme, salt, and pepper, cooking for another minute.
- Assemble the crepe rolls by placing mushroom filling and brie on a crepe, then roll tightly.
- Preheat oven to 375°F (190°C).
- Bake the crepe rolls for 8-10 minutes until brie is melted.
- Serve warm, garnished with fresh thyme leaves.

Allowing the batter to rest is crucial for tender crepes. A non-stick skillet aids in easy flipping.
