Delicious and comforting birria tacos, enriched with flavors from marinated beef simmered to tenderness and enjoyed with a flavorful broth.
Ingredients

- 2 lbs beef chuck or brisket
- 3 medium tomatoes
- 1 onion
- 4 cloves garlic
- 2–3 dried guajillo chiles
- 2–3 dried ancho chiles
- 2 teaspoons cumin
- 2 teaspoons oregano
- 4 cups beef broth
- Salt to taste
- Taco shells
- Oaxacan cheese or cheese of choice
- Cilantro
- Lime
- Onions (for garnish)
Instructions
- Rehydrate the chiles by soaking them in warm water for about 30 minutes.
- Blend the rehydrated chiles with tomatoes, onion, garlic, cumin, oregano, and salt until smooth.
- Sear the beef chunks in a large pot until browned on all sides.
- Simmer the beef with the blended sauce and beef broth, cooking gently for 120 to 180 minutes.
- Shred the beef into bite-sized pieces once tender.
- Prepare the tacos by frying taco shells, adding cheese and shredded beef until crispy.
- Serve the birria tacos with consomé for dipping, garnished with onions, cilantro, and lime.
Notes
For best flavor, consider marinating the beef in the sauce overnight. Customize toppings with avocado or salsa.
