Description

A delightful gluten-free dessert that combines the bright flavors of oranges and the nutty goodness of pistachios, perfect for any occasion.


Ingredients

  • 2 large oranges
  • 3 large eggs
  • 3/4 cup sugar
  • 1 1/2 cups finely ground pistachios
  • 1/2 cup almond flour
  • 1 tsp baking powder
  • 1/4 cup fresh orange juice
  • 2 tbsp honey

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Boil the oranges in a pot of water for about 30 minutes until soft, then drain and cool.
  3. Blend the cooled oranges into a smooth puree.
  4. Whisk the eggs and sugar together until pale and creamy.
  5. Fold in the orange puree gently.
  6. Stir in the pistachios and almond flour until evenly distributed.
  7. Mix in the baking powder until combined.
  8. Grease an 8-inch round cake pan.
  9. Pour the batter into the prepared pan.
  10. Bake for 40 to 45 minutes until set and golden.
  11. Make the honey orange syrup by warming orange juice and honey until dissolved.
  12. Brush the warm syrup over the cooled cake.

Notes

Serve with powdered sugar or a dollop of whipped cream; also pairs well with candied orange slices or vanilla ice cream.
