- 2 large oranges
- 3 large eggs
- 3/4 cup sugar
- 1 1/2 cups finely ground pistachios
- 1/2 cup almond flour
- 1 tsp baking powder
- 1/4 cup fresh orange juice
- 2 tbsp honey
Instructions
- Preheat the oven to 350°F (175°C).
- Boil the oranges in a pot of water for about 30 minutes until soft, then drain and cool.
- Blend the cooled oranges into a smooth puree.
- Whisk the eggs and sugar together until pale and creamy.
- Fold in the orange puree gently.
- Stir in the pistachios and almond flour until evenly distributed.
- Mix in the baking powder until combined.
- Grease an 8-inch round cake pan.
- Pour the batter into the prepared pan.
- Bake for 40 to 45 minutes until set and golden.
- Make the honey orange syrup by warming orange juice and honey until dissolved.
- Brush the warm syrup over the cooled cake.
Notes
Serve with powdered sugar or a dollop of whipped cream; also pairs well with candied orange slices or vanilla ice cream.
