- 3 large eggs
- 3 tablespoons cottage cheese
- 1 tablespoon honey
- 1/4 teaspoon cream of tartar
- 1/2 cup fresh blueberries
- 1/4 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
- Separate the eggs, placing yolks in one bowl and whites in another.
- Add cottage cheese, honey, vanilla extract, and a pinch of salt to the yolk bowl and mix until smooth.
- Whip the egg whites with cream of tartar until stiff peaks form.
- Fold the yolk mixture into the whipped egg whites gently.
- Carefully fold in the blueberries evenly into the batter.
- Scoop mounds of batter onto the prepared baking sheet, leaving space between each mound.
- Bake for 25-30 minutes until golden brown.
- Cool on a wire rack before serving warm.
