Description

A light and fluffy cloud bread made with cottage cheese and fresh blueberries, perfect for breakfast or as a healthy snack.


Ingredients

  • 3 large eggs
  • 3 tablespoons cottage cheese
  • 1 tablespoon honey
  • 1/4 teaspoon cream of tartar
  • 1/2 cup fresh blueberries
  • 1/4 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Separate the eggs, placing yolks in one bowl and whites in another.
  3. Add cottage cheese, honey, vanilla extract, and a pinch of salt to the yolk bowl and mix until smooth.
  4. Whip the egg whites with cream of tartar until stiff peaks form.
  5. Fold the yolk mixture into the whipped egg whites gently.
  6. Carefully fold in the blueberries evenly into the batter.
  7. Scoop mounds of batter onto the prepared baking sheet, leaving space between each mound.
  8. Bake for 25-30 minutes until golden brown.
  9. Cool on a wire rack before serving warm.
