A refreshing dish combining shrimp, mango, and crunchy veggies, served with a zesty lime peanut sauce. Perfect as an appetizer or light meal.
Ingredients

- 200–250 g shrimp, peeled & deveined
- Salt & black pepper
- Splash of lime juice
- Rice paper wrappers
- Ripe mango, thinly sliced
- Shredded carrots
- Cucumber sticks
- Red bell pepper, thinly sliced
- Lettuce leaves
- Fresh mint & cilantro
- 1/4 cup peanut butter
- Juice of 1 lime
- 1–2 tbsp soy sauce
- 1 tbsp honey or maple syrup
- 1 tsp grated ginger (optional)
- 1 clove garlic, minced
- Warm water (to thin, as needed)
- Optional: chili flakes or sriracha
Instructions
- Cook the shrimp: Boil or sauté the shrimp for 2–3 minutes until pink and opaque. Season lightly with salt, black pepper, and lime juice. Let cool and slice in half lengthwise.
- Prepare the sauce: In a bowl, whisk together peanut butter, lime juice, soy sauce, honey, garlic, and ginger. Gradually add warm water until smooth.
- Soften rice paper: Dip a rice paper sheet in warm water for 5–7 seconds. Lay it flat on a damp surface.
- Assemble rolls: Place a lettuce leaf on the rice paper, then add shrimp, mango, carrots, cucumber, bell pepper, and herbs. Fold and roll tightly to seal.
- Serve: Slice the rolls in half if preferred and serve with Lime Peanut Sauce for dipping.
