Ingredients

4 cups seedless watermelon, cubed or balled
3/4 cup feta cheese, crumbled
1/4 cup fresh mint leaves, chopped or torn
1 cup cucumber, thinly sliced or diced (optional)
Dressing & Seasonings:
2 tbsp extra virgin olive oil
1 tbsp fresh lime juice or balsamic glaze
Freshly cracked black pepper, to taste
Pinch of sea salt (optional)
Instructions
1. Place cubed watermelon in a large mixing bowl.
2. Add cucumber (if using), feta, and chopped mint.
3. In a small bowl or jar, whisk together olive oil and lime juice (or balsamic glaze).
