Description
Crispy golden rolls filled with creamy feta cheese and herbs these fried feta rolls are the perfect appetizer or snack, pairing salty cheese with a crunchy bite.
Ingredients
8 sheets phyllo pastry (or spring roll wrappers)
7 oz (200g) feta cheese, crumbled
1/4 cup cream cheese (optional for creaminess)
2 tbsp chopped fresh dill or parsley
1/2 tsp black pepper
1/4 tsp chili flakes (optional)
Vegetable oil for frying
Honey or tzatziki for serving
Instructions
1. In a bowl, combine feta cheese, cream cheese, herbs, pepper, and chili flakes until well mixed.
2. Lay one sheet of phyllo pastry on a flat surface and cut it into rectangles (about 6×8 inches).
3. Place a spoonful of the feta mixture at one end, fold in the sides, and roll tightly to form a log.
4. Brush the end with a little water to seal.
5. Heat oil in a deep skillet over medium-high heat.
6. Fry rolls in batches until golden brown and crispy, turning as needed.
7. Remove and drain on paper towels.
8. Serve warm, drizzled with honey or alongside tzatziki.
Notes
For a lighter version, brush with olive oil and bake at 375°F (190°C) for 15–20 minutes.
Experiment with different herbs or add a touch of lemon zest for brightness.
Best served immediately while crisp and warm.
