1½ cups gluten-free rolled oats

¼ cup almond flour (or finely ground almonds)

¼ cup natural peanut butter

2 tbsp honey or maple syrup

2 tbsp coconut oil, melted

½ tsp vanilla extract

Pinch of salt

Yogurt Filling:

1½ cups plain Greek yogurt (full-fat for creaminess)

¼ cup peanut butter (smooth, natural)

23 tbsp honey or maple syrup (adjust to taste)

1 tsp vanilla extract

Toppings (optional):

Crushed peanuts or chopped nuts

Mini chocolate chips (dairy-free if needed)

Drizzle of melted dark chocolate

Sliced strawberries or freeze-dried fruit


Instructions

1. Line a square baking dish with parchment paper.

2. In a bowl, mix rolled oats, almond flour, peanut butter, honey (or maple syrup), melted coconut oil, vanilla, and salt until combined.

3. Press the mixture firmly into the bottom of the pan to form the base layer.

4. In another bowl, whisk together Greek yogurt, peanut butter, sweetener of choice, and vanilla extract until smooth.

5. Spread yogurt mixture evenly over the base layer.

6. Top with desired toppings such as nuts, chocolate, or fruit.

7. Freeze for 3–4 hours until solid.

8. Once frozen, lift out using parchment paper and slice into bars.

9. Store in freezer-safe container; let thaw a few minutes before eating.

Notes

Use full-fat Greek yogurt for best texture and creaminess.

Bars are customizable with toppings: try cacao nibs, berries, or granola.

To make vegan, use maple syrup and dairy-free yogurt and chips.
