Ingredients

225 g (8 oz) dark chocolate, chopped

2 tbsp unsalted butter

¾ cup (150 g) granulated sugar

¼ cup (50 g) brown sugar

2 large eggs, room temperature

1 tsp vanilla extract

½ cup (65 g) all-purpose flour

2 tbsp unsweetened cocoa powder

¼ tsp baking powder

¼ tsp salt

¾ cup (130 g) chocolate chips or chunks


Instructions

1. Preheat oven to 180°C (350°F). Line baking sheets with parchment paper.

2. In a microwave-safe bowl or over a double boiler, melt dark chocolate and butter together until smooth. Let cool slightly.

3. In a large bowl, whisk granulated sugar, brown sugar, eggs, and vanilla until thick and glossy — about 2 minutes.

4. Pour in the melted chocolate mixture and stir until blended.

5. In a separate bowl, whisk flour, cocoa powder, baking powder, and salt. Gently fold into the wet ingredients until just combined. Stir in chocolate chips.

6. Drop tablespoon-sized mounds of dough onto the prepared baking sheets. Chill for 15–20 minutes (this helps maintain that fudgy texture).

7. Bake for 9–11 minutes, until the tops are shiny and crackly but still soft in the middle.

8. Let cool on the tray for 5 minutes before transferring to a rack — the centers will set as they cool.
