Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1.5 lbs baby red potatoes, quartered
  • 1 lb whole carrots, peeled and cut into chunks
  • 6 cloves garlic, minced
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp chopped parsley (optional, for garnish)
  • 1/2 cup chicken broth

Instructions

  1. Toss the chicken, baby red potatoes, and carrots into the slow cooker, distributing them evenly.
  2. In a bowl, combine melted butter, minced garlic, Italian seasoning, salt, pepper, and chicken broth.
  3. Pour the garlic butter mixture over the chicken and veggies, stirring gently to coat.
  4. Cover the slow cooker and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours.
  5. Once done, check if the chicken is tender. Optionally garnish with parsley before serving.

Notes

Can substitute chicken with thighs for juicier results. Add herbs or spices for more flavor.
