- 2 lbs boneless, skinless chicken breasts or thighs
- 1.5 lbs baby red potatoes, quartered
- 1 lb whole carrots, peeled and cut into chunks
- 6 cloves garlic, minced
- 1/2 cup (1 stick) unsalted butter, melted
- 1 tbsp Italian seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp chopped parsley (optional, for garnish)
- 1/2 cup chicken broth
Instructions
- Toss the chicken, baby red potatoes, and carrots into the slow cooker, distributing them evenly.
- In a bowl, combine melted butter, minced garlic, Italian seasoning, salt, pepper, and chicken broth.
- Pour the garlic butter mixture over the chicken and veggies, stirring gently to coat.
- Cover the slow cooker and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours.
- Once done, check if the chicken is tender. Optionally garnish with parsley before serving.
Notes
Can substitute chicken with thighs for juicier results. Add herbs or spices for more flavor.
