Description

A flavorful twist on classic meatloaf, this Garlic Parmesan Chicken Meatloaf is moist, cheesy, and packed with savory Italian flavors  perfect for an easy family dinner.


Ingredients

1 lb ground chicken

1/2 cup breadcrumbs

1/3 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

2 cloves garlic, minced

1 large egg

2 tbsp milk

1 tbsp olive oil

1 tsp Italian seasoning

1/2 tsp salt

1/4 tsp black pepper

Fresh parsley for garnish


Instructions

1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease a loaf pan.

2. In a large mixing bowl, combine ground chicken, breadcrumbs, Parmesan, mozzarella, garlic, egg, milk, olive oil, Italian seasoning, salt, and pepper.

3. Mix gently until just combined — do not overmix.

4. Shape the mixture into a loaf shape on the prepared pan or press evenly into the loaf pan.

5. Bake for 35–40 minutes, or until internal temperature reaches 165°F (74°C).

6. Remove from oven and rest for 5–10 minutes before slicing.

7. Garnish with chopped parsley and extra Parmesan before serving.

Notes

For a crispier top, broil the meatloaf for the last 2 minutes of baking.

Serve with roasted vegetables or a side salad.

Leftovers make great sandwiches the next day.
