Ingredients
2 large chicken breasts, diced
2 tbsp olive oil
4 cloves garlic, minced
1 tsp Italian seasoning
1 tsp salt
1/2 tsp black pepper
3 cups chicken broth
2 cups heavy cream
1 cup grated Parmesan cheese
12 oz pasta (penne or fettuccine)
2 tbsp butter
Optional: chopped parsley, red pepper flakes
Instructions
1. Heat olive oil in a large pot over medium heat. Add diced chicken, salt, pepper, and Italian seasoning. Cook until lightly browned.
2. Add minced garlic and cook for 1 minute.
3. Pour in chicken broth and heavy cream; stir well.
4. Add uncooked pasta to the pot. Stir and bring to a simmer.
5. Cover and cook 12–15 minutes, stirring occasionally, until pasta is tender.
6. Remove lid and stir in butter and Parmesan cheese until melted and creamy.
7. Adjust seasoning as needed. If sauce is too thick, add a splash of broth or cream.
8. Serve hot, topped with parsley or red pepper flakes if desired.
Notes
For extra flavor, sear chicken until golden.
Use freshly grated Parmesan for the best melting texture.
Great with spinach, broccoli, or sun-dried tomatoes added in.
