Description
Tender chicken breasts or thighs are slow-cooked with baby potatoes, garlic, and Parmesan cheese, resulting in a creamy, savory dish that’s comforting, hands-off, and family-friendly.
Ingredients
4 boneless, skinless chicken breasts or thighs
1 ½ lbs (700 g) baby potatoes, halved
4 cloves garlic, minced
1 cup shredded Parmesan cheese
½ cup chicken broth
½ cup heavy cream or half-and-half
2 tbsp olive oil
1 tsp dried thyme
1 tsp dried rosemary
½ tsp paprika
Salt & pepper, to taste
2 tbsp chopped parsley, for garnish
Instructions
1. Lightly grease your crockpot with cooking spray or a little olive oil.
2. Place halved baby potatoes at the bottom. Season chicken with salt, pepper, paprika, thyme, and rosemary. Lay chicken on top of the potatoes. Sprinkle minced garlic and Parmesan over the chicken and potatoes.
3. Pour chicken broth and heavy cream around (not over) the chicken to keep the cheese topping intact.
4. Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is cooked through and potatoes are tender.
5. Garnish with chopped parsley and extra Parmesan if desired. Serve warm as a complete meal.
Notes
Use chicken thighs for extra juiciness.
Add spinach or broccoli during the last 30 minutes for more veggies.
For a lighter version, replace cream with evaporated milk or Greek yogurt.
Store leftovers in an airtight container for up to 3 days — great for meal prep.
