Description

  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans
  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1/2 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the Oven and Pans: Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans.
  2. Mix Dry Ingredients: In a large bowl, mix the cocoa powder, flour, sugar, baking powder, baking soda, and salt together.
  3. Add Wet Ingredients: Add the eggs, milk, vegetable oil, and 2 teaspoons of vanilla extract to the dry ingredients and mix until smooth.
  4. Incorporate Boiling Water: Carefully stir in the boiling water to thin the batter.
  5. Pour the batter into the prepared pans and bake for 30-35 minutes.
  6. Cool the Cakes: Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  7. Prepare the Frosting: Melt butter in a saucepan, add brown sugar, milk, and vanilla, and bring to a gentle boil for 5 minutes.
  8. Mix in Coconut and Pecans: Remove from heat and stir in coconut and pecans.
  9. Frost the Cake: Layer the frosting between the cake layers and on top.
  10. Slice and Serve: Serve the cake at room temperature.

Store the cake in an airtight container for up to a week or freeze for 3 months.
