Instructions
- Prepare the Oven and Pans: Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans.
- Mix Dry Ingredients: In a large bowl, mix the cocoa powder, flour, sugar, baking powder, baking soda, and salt together.
- Add Wet Ingredients: Add the eggs, milk, vegetable oil, and 2 teaspoons of vanilla extract to the dry ingredients and mix until smooth.
- Incorporate Boiling Water: Carefully stir in the boiling water to thin the batter.
- Pour the batter into the prepared pans and bake for 30-35 minutes.
- Cool the Cakes: Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- Prepare the Frosting: Melt butter in a saucepan, add brown sugar, milk, and vanilla, and bring to a gentle boil for 5 minutes.
- Mix in Coconut and Pecans: Remove from heat and stir in coconut and pecans.
- Frost the Cake: Layer the frosting between the cake layers and on top.
- Slice and Serve: Serve the cake at room temperature.
