Description

Delightful chocolate cookies filled with a creamy coconut-pecan frosting, perfect for any occasion.


Ingredients

  • 200 g flour
  • 50 g cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 115 g butter, softened
  • 150 g brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 120 ml buttermilk
  • 2 egg yolks
  • 120 ml condensed milk
  • 75 g brown sugar
  • 60 g butter
  • 100 g shredded coconut
  • 80 g chopped pecans
  • 1/2 tsp vanilla

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a bowl, combine flour, cocoa powder, baking soda, and salt.
  3. Cream softened butter and brown sugar until smooth and fluffy.
  4. Add egg and vanilla extract, mixing until fully incorporated.
  5. Alternately add dry ingredients and buttermilk to the wet mixture.
  6. Scoop mounds of batter onto a lined baking sheet.
  7. Bake for 10 to 12 minutes until firm around the edges.
  8. Let cookies cool on a baking sheet then transfer to a wire rack.
  9. In a saucepan, heat egg yolks, condensed milk, brown sugar, and butter, stirring until thickened.
  10. Remove from heat and stir in coconut, pecans, and vanilla.
  11. Assemble the pies by placing the filling between two cookies.
  12. Let the assembled pies sit before serving.
