- 115 g butter, softened
- 150 g brown sugar
- 1 egg
- 1 tsp vanilla
- 120 ml buttermilk
- 2 egg yolks
- 120 ml condensed milk
- 75 g brown sugar
- 60 g butter
- 100 g shredded coconut
- 80 g chopped pecans
- 1/2 tsp vanilla
Instructions
- Preheat your oven to 180°C (350°F).
- In a bowl, combine flour, cocoa powder, baking soda, and salt.
- Cream softened butter and brown sugar until smooth and fluffy.
- Add egg and vanilla extract, mixing until fully incorporated.
- Alternately add dry ingredients and buttermilk to the wet mixture.
- Scoop mounds of batter onto a lined baking sheet.
- Bake for 10 to 12 minutes until firm around the edges.
- Let cookies cool on a baking sheet then transfer to a wire rack.
- In a saucepan, heat egg yolks, condensed milk, brown sugar, and butter, stirring until thickened.
- Remove from heat and stir in coconut, pecans, and vanilla.
- Assemble the pies by placing the filling between two cookies.
- Let the assembled pies sit before serving.
