Description
A soothing and flavorful chicken noodle soup infused with the warmth of ginger and garlic — perfect for cold days or when you need a nourishing comfort meal.
Ingredients
1 tbsp olive oil
1 tbsp sesame oil
1 medium onion, finely chopped
4 garlic cloves, minced
2 tbsp fresh ginger, grated
1 lb boneless skinless chicken breast or thighs, thinly sliced
6 cups chicken broth
2 cups water
2 tbsp soy sauce
1 tbsp rice vinegar
6 oz egg noodles or rice noodles
1 cup shredded carrots
1 cup baby spinach or bok choy
2 green onions, sliced
Salt and pepper to taste
Fresh cilantro and lime wedges for garnish
Instructions
1. Heat olive oil and sesame oil in a large pot over medium heat.
2. Add onion, garlic, and ginger; sauté until fragrant and softened.
3. Add chicken slices and cook until no longer pink.
4. Pour in chicken broth, water, soy sauce, and rice vinegar; bring to a simmer.
5. Add noodles and cook according to package directions until tender.
6. Stir in carrots and simmer for another 3–4 minutes.
7. Add spinach and cook just until wilted.
8. Season with salt and pepper to taste.
9. Ladle into bowls and garnish with green onions, cilantro, and a squeeze of lime.
Notes
For extra heat, add chili flakes or a dash of sriracha.
Use rice noodles for a gluten-free version.
Leftovers taste even better the next day as the flavors deepen.
