Description
These classic Gingerbread Cookies are soft, spiced, and full of holiday flavor. With warm notes of ginger, cinnamon, and molasses, they’re perfect for decorating or enjoying with a cup of cocoa during the festive season.
Ingredients
Dry Ingredients:
3 cups (375 g) all-purpose flour
¾ tsp baking soda
½ tsp salt
1 tbsp ground ginger
1 tbsp ground cinnamon
¼ tsp ground cloves
¼ tsp nutmeg (optional)
Wet Ingredients:
¾ cup (170 g) unsalted butter, softened
¾ cup (150 g) brown sugar
⅔ cup (160 ml) molasses (or dark treacle)
1 large egg
1 tsp vanilla extract
Instructions
1. In a medium bowl, whisk together flour, baking soda, salt, and spices.
2. In a large bowl, beat butter and brown sugar until light and creamy.
3. Mix in molasses, egg, and vanilla extract until well combined.
4. Gradually add the dry ingredients, mixing just until a soft dough forms.
5. Divide dough into two portions, flatten each into a disc, wrap in plastic, and chill for at least 1 hour (or overnight).
6. Preheat oven to 180°C (350°F). Roll dough on a lightly floured surface to about ¼ inch (6 mm) thick.
7. Cut out shapes using cookie cutters — gingerbread men, stars, trees, etc.
8. Place on lined baking sheets and bake for 8–10 minutes for soft cookies, or up to 12 minutes for crispier ones.
9. Cool on the tray for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For extra flavor, chill the dough overnight to let the spices deepen.
Decorate with royal icing, melted chocolate, or simple powdered sugar glaze.
Store cookies in an airtight container for up to a week, or freeze for longer storage.
