Description
A moist, warmly spiced gingerbread loaf with rich molasses flavor and a soft, tender crumb. Perfect for slicing, snacking, or serving with coffee during the holidays or any cozy day.
Ingredients
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
2 tsp ground ginger
1 tsp ground cinnamon
1/4 tsp ground cloves
1/2 cup unsalted butter, melted
3/4 cup brown sugar, packed
1/2 cup molasses
1 large egg
1 cup milk
1 tsp vanilla extract
Instructions
1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
2. In a medium bowl, whisk together flour, baking soda, salt, ginger, cinnamon, and cloves.
3. In a large bowl, whisk melted butter and brown sugar until smooth.
4. Add molasses, egg, milk, and vanilla; mix until fully combined.
5. Gradually stir dry ingredients into wet ingredients until just incorporated.
6. Pour batter into prepared loaf pan and smooth the top.
7. Bake for 50–55 minutes, or until a toothpick inserted in the center comes out clean.
8. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Do not overmix the batter to keep the loaf tender.
Serve plain or with a dusting of powdered sugar.
