Description

Delicious baked feta rolls with a crispy wrapper and a sweet, tangy cranberry honey sauce, perfect for any occasion.


Ingredients

  • 200 g feta cheese, cut into sticks
  • 1012 spring roll wrappers (or phyllo sheets, halved)
  • 2 tbsp olive oil or melted butter
  • Fresh thyme or oregano (optional)
  • 1/4 cup dried cranberries, finely chopped
  • 3 tbsp honey
  • 1 tbsp warm water or orange juice
  • Optional: pinch of cinnamon or orange zest

Instructions

  1. Prep the cranberry honey: Warm honey gently using a microwave or on the stovetop. Stir in the chopped cranberries, warm water or orange juice, and any optional zest or cinnamon. Set aside to infuse the flavors.
  2. Assemble the rolls: Take a spring roll wrapper and place a feta stick near the bottom. Sprinkle with fresh herbs if using. Roll the wrapper tightly, folding in the sides like a burrito. Brush the top lightly with olive oil or melted butter.
  3. Bake until golden: Preheat your oven to 190°C (375°F). Arrange the rolls seam-side down on a lined baking tray. Bake for 15–18 minutes, turning once, until golden brown and crispy. For air fryer, cook at 180°C (350°F) for about 10–12 minutes.
  4. Serve: Drizzle warm cranberry honey over the rolls or serve it on the side for dipping.

Notes

Best enjoyed warm, right out of the oven. Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in the oven for best results.
