- 3 ripe pears, peeled and chopped
- 2 tbsp sugar
- 1 tbsp lemon juice
- 1 cup heavy whipping cream
- 1/2 cup mascarpone
- 1/4 cup powdered sugar
- 1 tsp pure vanilla extract
- 2 tbsp brown sugar (for caramelized rim)
- Gold sugar pearls or coarse sugar crystals
- Fresh mint leaves
Instructions
- Cook the pears: Place chopped pears in a saucepan, add sugar and lemon juice, and cook over medium heat until soft, about 10-15 minutes.
- Make pear puree: Blend the cooked pears until smooth and let cool completely.
- Whip the cream: Beat heavy whipping cream in a bowl until soft peaks form.
- Prepare mascarpone mixture: In a separate bowl, combine mascarpone, powdered sugar, and vanilla, and beat until creamy.
- Combine mixtures: Gently fold cooled pear puree into the mascarpone mixture until well mixed.
- Fold in whipped cream: Carefully incorporate the whipped cream into the pear-mascarpone mixture without deflating.
- Spoon into cups: Divide the mousse into individual cups, leaving space for garnishing.
- Caramelize rim: Sprinkle brown sugar around the rims of the cups and caramelize with a kitchen torch or under the broiler.
- Pipe whipped cream: Add extra whipped cream on top of each cup using a star piping tip.
- Garnish: Decorate each cup with a slice of pear, gold sugar pearls, and a fresh mint leaf.
Notes
Store in the refrigerator for up to 2-3 days, but best enjoyed fresh. Add caramelized sugar rim right before serving.
