Description

A delightful dessert combining creamy mascarpone and luscious pear puree, elegantly topped with a caramelized rim.


Ingredients

  • 3 ripe pears, peeled and chopped
  • 2 tbsp sugar
  • 1 tbsp lemon juice
  • 1 cup heavy whipping cream
  • 1/2 cup mascarpone
  • 1/4 cup powdered sugar
  • 1 tsp pure vanilla extract
  • 2 tbsp brown sugar (for caramelized rim)
  • Gold sugar pearls or coarse sugar crystals
  • Fresh mint leaves

Instructions

  1. Cook the pears: Place chopped pears in a saucepan, add sugar and lemon juice, and cook over medium heat until soft, about 10-15 minutes.
  2. Make pear puree: Blend the cooked pears until smooth and let cool completely.
  3. Whip the cream: Beat heavy whipping cream in a bowl until soft peaks form.
  4. Prepare mascarpone mixture: In a separate bowl, combine mascarpone, powdered sugar, and vanilla, and beat until creamy.
  5. Combine mixtures: Gently fold cooled pear puree into the mascarpone mixture until well mixed.
  6. Fold in whipped cream: Carefully incorporate the whipped cream into the pear-mascarpone mixture without deflating.
  7. Spoon into cups: Divide the mousse into individual cups, leaving space for garnishing.
  8. Caramelize rim: Sprinkle brown sugar around the rims of the cups and caramelize with a kitchen torch or under the broiler.
  9. Pipe whipped cream: Add extra whipped cream on top of each cup using a star piping tip.
  10. Garnish: Decorate each cup with a slice of pear, gold sugar pearls, and a fresh mint leaf.

Notes

Store in the refrigerator for up to 2-3 days, but best enjoyed fresh. Add caramelized sugar rim right before serving.
