Description
Moist, chocolatey, and wholesome grain free zucchini chocolate chip banana bread made with almond flour, ripe bananas, and zucchini.
Ingredients
2 cups almond flour
1 tsp baking soda
1/2 tsp baking powder
1 tsp cinnamon
1/4 tsp salt
3 large ripe bananas, mashed
2 cups zucchini, grated & squeezed
2 large eggs
1/4 cup coconut oil, melted
1 tsp vanilla extract
1/2 cup dark chocolate chips
Instructions
1. Preheat oven to 350°F (175°C) and line loaf pan with parchment.
2. Mash bananas and grate zucchini, squeezing out liquid.
3. Whisk eggs, bananas, oil, vanilla, and zucchini.
4. Mix almond flour, baking soda, baking powder, cinnamon, and salt.
5. Combine wet and dry ingredients, fold in chocolate chips.
6. Pour batter into loaf pan and bake 45–55 minutes.
7. Cool for 15 minutes, then transfer to rack to cool completely.
Notes
Store in airtight container for 2 days at room temp or 1 week refrigerated.
Freeze slices for up to 2 months.
