Ingredients

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 store-bought flatbreads or naan
  • 1/2 cup tzatziki sauce
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced (or thinly sliced)
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup kalamata olives, sliced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp olive oil (for brushing flatbreads)

Instructions

  1. Prepare the Marinade: In a medium bowl, mix together 2 tablespoons of olive oil, 2 tablespoons of lemon juice, 1 teaspoon of dried oregano, 1/2 teaspoon of garlic powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  2. Marinate the Chicken: Add the chicken pieces and toss to coat. Let marinate for at least 15 minutes.
  3. Heat the Skillet: Place a skillet on medium-high heat.
  4. Cook the Chicken: Add marinated chicken to the hot skillet and cook for about 4–5 minutes on each side.
  5. Preheat the Oven: Preheat your oven to 375°F (190°C).
  6. Brush and Bake: Lightly brush each flatbread with olive oil and bake for about 5 minutes.
  7. Spread Tzatziki: Once flatbreads are ready, spread a dollop of tzatziki sauce on each.
  8. Add Toppings: Top with cooked chicken, halved tomatoes, cucumber, onion, feta, and olives.
  9. Garnish: Sprinkle with parsley.
  10. Serve: Slice into wedges and enjoy!

Notes

For best flavor, marinate the chicken longer. Use fresh ingredients for a better taste.
