Description

Ingredients

1 English cucumber, cut into 1/2-inch slices

12 cherry tomatoes

12 cubes of feta cheese (about 1 inch each)

12 Kalamata olives, pitted

1 tbsp olive oil

1 tsp dried oregano

Freshly cracked black pepper, to taste

Toothpicks or small skewers


Instructions

1. Cut cucumber into thick slices and pat dry.

2. Assemble each skewer by threading a cherry tomato, a cube of feta, an olive, and a cucumber slice.

3. Arrange skewers on a serving platter.

4. Drizzle lightly with olive oil.

5. Sprinkle with oregano and black pepper.

6. Serve immediately or chill for 15 minutes before serving.

Notes

For extra flavor, marinate the feta cubes in olive oil and herbs before assembling.

Use colorful heirloom cherry tomatoes for a beautiful presentation.
