Description
A quick and vibrant Mediterranean-inspired dinner ready in just 30 minutes.
Ingredients
1 lb large shrimp, peeled & deveined
2 cups cooked quinoa or brown rice
1 cucumber, diced
1 cup cherry tomatoes, halved
1/4 red onion, thinly sliced
1 red bell pepper, diced
2 tbsp olive oil
2 cloves garlic, minced
1 lemon (zest + juice)
1 tsp dried oregano
Salt & pepper to taste
1/2 cup crumbled feta (optional)
Fresh parsley & dill for garnish
Greek yogurt or tahini sauce
Instructions
1. Cook grains according to package.
2. Marinate shrimp with olive oil, garlic, lemon juice, and oregano.
3. Chop cucumbers, tomatoes, onion, and peppers.
4. Heat skillet and cook shrimp 2–3 minutes per side.
5. Assemble bowls with grains, veggies, shrimp, and sauce.
6. Top with feta and fresh herbs.
Notes
Marinate shrimp no longer than 15 minutes.
Use meal prep containers to store components separately.
