Description
This Greek Yogurt Banana Bread is moist, fluffy, and naturally sweetened with ripe bananas and honey. The Greek yogurt adds a rich tang and keeps it soft without extra butter. Perfect for breakfast, snacks, or a wholesome dessert and it’s ready in just one bowl!
Ingredients
1 ½ cups all-purpose flour
1 tsp baking soda
½ tsp baking powder
¼ tsp salt
½ tsp ground cinnamon (optional)
2–3 ripe bananas, mashed (about 1 cup)
½ cup Greek yogurt
⅓ cup honey or maple syrup
2 large eggs
1 tsp vanilla extract
¼ cup melted coconut oil or butter
½ cup chopped walnuts or chocolate chips (optional)
Instructions
1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
3. In a large bowl, mash the bananas. Stir in Greek yogurt, honey, eggs, vanilla, and melted oil/butter until smooth.
4. Gradually fold the dry ingredients into the wet ingredients until just combined.
5. Gently fold in walnuts or chocolate chips if using.
6. Pour batter into the prepared loaf pan and smooth the top.
7. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
8. Let cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.
9. Slice and enjoy for breakfast, a snack, or a healthy dessert.
