Ingredients

2 cups all-purpose flour

2 tsp baking powder

1/2 tsp garlic powder

1/2 tsp paprika

1/2 tsp salt

1/4 tsp black pepper

2 large eggs

1/2 cup milk

1/4 cup olive oil

1 1/2 cups grated zucchini (squeezed dry)

1 cup sharp cheddar cheese (grated)

1/2 cup chopped green onions


Instructions

1. Preheat oven to 350°F (175°C).

2. Grease and line a loaf pan with parchment paper.

3. In a bowl, whisk eggs, milk, and olive oil.

4. In another bowl, combine flour, baking powder, garlic powder, paprika, salt, and pepper.

5. Fold wet mixture into dry ingredients.

6. Stir in zucchini, cheddar, and green onions.

7. Pour batter into prepared pan.

8. Bake for 45–50 minutes until golden brown and set.

9. Cool 10 minutes, then remove from pan and slice.

Notes

Do not overmix batter to avoid dense bread.

Squeeze zucchini well to remove excess liquid.

Bread keeps for 2 days at room temperature, 5 days in the fridge, or 2 months frozen.

Freshly grated cheese melts better than packaged shredded cheese.
