Ingredients
2 boneless, skinless chicken breasts
2 tbsp olive oil, divided
1 pint cherry tomatoes
2 garlic cloves, minced
1 tsp balsamic vinegar
1 tsp dried Italian herbs (or a mix of oregano and basil)
Salt and black pepper to taste
Fresh basil leaves for garnish
Lemon wedges for serving
Instructions
1. Preheat grill or grill pan to medium-high heat.
2. Brush chicken breasts with 1 tablespoon of olive oil and season generously with salt, pepper, and Italian herbs.
3. Grill chicken for 5–6 minutes per side, or until cooked through and golden with nice grill marks. Remove and let rest.
4. While chicken rests, heat remaining olive oil in a skillet over medium-high heat.
5. Add cherry tomatoes and cook for 3–4 minutes until blistered and slightly charred.
6. Stir in garlic and balsamic vinegar, cooking for another minute until fragrant.
7. Slice grilled chicken and serve topped with the charred tomato mixture.
8. Garnish with fresh basil and a squeeze of lemon juice before serving.
Notes
Try adding mozzarella pearls or crumbled feta for a creamy finish.
Use a mix of colorful cherry tomatoes for a beautiful presentation.
