Description
A refreshing summer salad featuring smoky grilled halloumi, sweet watermelon, and fresh herbs.
Ingredients
200g halloumi cheese
4 cups watermelon cubes
2 tbsp olive oil
2 tbsp fresh lemon juice
1 tbsp honey (optional)
Fresh mint leaves
Fresh basil leaves
Salt & black pepper to taste
Instructions
1. Slice halloumi into ½-inch pieces and pat dry.
2. Heat grill pan and brush with olive oil.
3. Grill halloumi 2–3 minutes per side until golden.
4. Cube watermelon and place in serving bowl.
5. Add grilled halloumi on top.
6. Whisk olive oil, lemon juice, and honey for dressing.
7. Drizzle dressing over salad and toss gently.
8. Garnish with mint and basil before serving.
Notes
Serve immediately for best flavor.
Avoid storing dressed salad too long, as watermelon releases liquid.
