These Grilled Ranch Garlic Parmesan Chicken Skewers are juicy, flavorful, and perfect for BBQ season. A quick marinade delivers bold ranch flavor, cheesy richness, and garlic herb goodness in every bite.
Ingredients
For the Chicken:
1½ lbs (680g) boneless skinless chicken breasts or thighs, cut into 1.5-inch pieces
Wooden or metal skewers (if using wooden, soak in water for 30 minutes)
For the Marinade:
¼ cup olive oil
⅓ cup grated Parmesan cheese (freshly grated preferred)
3 tablespoons ranch seasoning mix (store-bought or homemade)
3 garlic cloves, minced
1 tablespoon lemon juice or white vinegar
1 tablespoon chopped fresh parsley (or 1 tsp dried)
½ teaspoon paprika (optional, for color)
Salt & pepper to taste
Instructions
1. In a large bowl, whisk together olive oil, Parmesan, ranch seasoning, garlic, lemon juice, parsley, paprika, salt, and pepper.
2. Add chicken pieces and toss to coat evenly. Cover and marinate in the refrigerator for 30 minutes to 4 hours.
3. If using wooden skewers, soak them in water for at least 30 minutes before grilling.
4. Thread marinated chicken pieces onto skewers.
5. Preheat grill to medium-high heat and lightly oil grates.
6. Grill skewers for 10–12 minutes, turning occasionally, until chicken is cooked through and lightly charred.
7. Garnish with extra Parmesan and parsley if desired. Serve hot.
Notes
Chicken thighs stay extra juicy on the grill.
Add chopped bell peppers or onions to the skewers for color and variety.
Pairs well with grilled veggies, rice, or a side salad.
