Family-friendly Ground Beef Enchiladas with classic Mexican flavors and gooey cheese.
Ingredients

1 lb ground beef
2 tsp chili powder
1 tsp cumin
1 tsp smoked paprika
1 cup enchilada sauce
8 small corn tortillas
1 cup shredded cheese
1/2 cup diced onion
2 tbsp olive oil
Salt and pepper to taste
Instructions
1. Preheat oven to 375°F and grease baking dish.
2. Cook onions in oil; add ground beef and brown.
3. Season beef; stir in spices.
4. Fill tortillas with beef, roll, and place in dish.
5. Top with sauce and cheese; bake until bubbly.
