Ingredients
3 ripe avocados
1 small tomato, finely diced
¼ small red onion, finely diced
1–2 cloves garlic, minced
1 lime, juiced
¼ tsp ground cumin
Salt and black pepper, to taste
2 tbsp fresh cilantro, chopped
¼ cup roasted pumpkin seeds (pepitas)
Optional: pinch of red pepper flakes for heat
Instructions
1. Cut avocados in half, remove the pit, and scoop the flesh into a medium bowl.
2. Mash to your preferred consistency (smooth or slightly chunky).
3. Add diced tomato, red onion, garlic, lime juice, cumin, salt, and pepper. Stir to combine.
4. Fold in chopped cilantro.
5. Stir in most of the roasted pumpkin seeds, reserving a few for garnish.
6. Transfer guacamole to a serving bowl.
7. Sprinkle remaining pumpkin seeds on top.
8. Serve immediately with tortilla chips, veggie sticks, or as a topping for tacos or bowls.
