1 tsp vanilla extract

1 cup (240 ml) buttermilk

For the glaze:

1 cup (120 g) powdered sugar

23 tbsp milk

½ tsp vanilla extract

Optional: orange or purple food coloring for a festive touch

For decoration:

Sprinkles, edible glitter, or candy eyes

Instructions

1. Preheat oven to 350°F (175°C). Grease and flour a 10-cup Bundt pan.

2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

3. In a large bowl, beat butter and sugar until light and fluffy.

4. Add eggs one at a time, then mix in vanilla.

5. Alternate adding dry ingredients and buttermilk (and pumpkin puree if using) to the butter mixture, beginning and ending with dry ingredients. Mix until just combined.

6. Pour batter into prepared Bundt pan and smooth the top.

7. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.

8. Let cake cool in pan for 15 minutes, then invert onto a wire rack to cool completely.

9. Whisk powdered sugar, milk, and vanilla until smooth. Add food coloring if desired.

10. Drizzle glaze over cooled cake.
