Description
A hearty and flavorful soup made with seasoned ground beef, vegetables, and a rich tomato broth the perfect comfort food for chilly nights or an easy weeknight dinner.
Ingredients
1 lb ground beef
1 tbsp olive oil (if needed)
1 medium onion, diced
2 garlic cloves, minced
3 carrots, sliced
2 celery stalks, chopped
1 (14.5 oz) can diced tomatoes
1 (8 oz) can tomato sauce
4 cups beef broth
2 cups diced potatoes
1 cup frozen green beans
1 tsp salt
1/2 tsp black pepper
1 tsp Italian seasoning
1/2 tsp smoked paprika
1 bay leaf
Fresh parsley for garnish
Instructions
1. In a large pot or Dutch oven, brown the ground beef over medium heat, breaking it apart as it cooks.
2. Drain excess grease if necessary, then add onion and garlic; cook until softened.
3. Add carrots, celery, diced tomatoes, tomato sauce, beef broth, potatoes, and seasonings.
4. Stir to combine and bring to a boil.
5. Reduce heat to low, cover, and simmer for 25–30 minutes, or until vegetables are tender.
6. Stir in green beans and cook for an additional 5 minutes.
7. Remove bay leaf, taste, and adjust seasoning as needed.
8. Serve hot, garnished with fresh parsley.
Notes
Use ground turkey or chicken for a lighter version.
Add corn, peas, or bell peppers for extra veggies.
