Ingredients

  • 1 cup grated carrots
  • 1/2 cup unsweetened applesauce
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/2 cup chopped nuts (optional)
  • 1/4 cup raisins (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine the rolled oats, grated carrots, and applesauce in a large bowl.
  3. Add honey (or maple syrup), cinnamon, baking powder, salt, and nutmeg to the mixture and stir well.
  4. Fold in optional nuts and raisins if desired.
  5. Drop spoonfuls of the cookie mixture onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 12-15 minutes, or until the edges are golden brown.
  7. Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For a vegan option, use maple syrup instead of honey. Feel free to customize with different nuts and dried fruits.
