- 1 cup grated carrots
- 1/2 cup unsweetened applesauce
- 1/4 cup honey or maple syrup
- 1/2 teaspoon cinnamon
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon nutmeg
- 1/2 cup chopped nuts (optional)
- 1/4 cup raisins (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Combine the rolled oats, grated carrots, and applesauce in a large bowl.
- Add honey (or maple syrup), cinnamon, baking powder, salt, and nutmeg to the mixture and stir well.
- Fold in optional nuts and raisins if desired.
- Drop spoonfuls of the cookie mixture onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until the edges are golden brown.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For a vegan option, use maple syrup instead of honey. Feel free to customize with different nuts and dried fruits.
