A vibrant heart-shaped beet salad featuring tender roasted beets, fresh greens, and a light vinaigrette an elegant and healthy dish perfect for special occasions or Valentine’s Day.
Ingredients
3 medium beets, roasted and peeled
2 cups mixed greens or arugula
2 tbsp olive oil
1 tbsp balsamic vinegar
1 tsp honey
Salt to taste
Black pepper to taste
2 tbsp crumbled goat cheese (optional)
1 tbsp chopped walnuts (optional)
Instructions
1. Roast beets until fork-tender, then allow to cool and peel.
2. Slice beets into rounds and cut into heart shapes using a small cutter.
3. Arrange mixed greens on a serving plate.
4. Whisk olive oil, balsamic vinegar, honey, salt, and pepper in a small bowl.
5. Place heart-shaped beets over the greens.
6. Drizzle with vinaigrette evenly.
7. Top with goat cheese and walnuts if using.
8. Serve immediately.
Notes
Wear gloves when handling beets to avoid staining.
Use golden beets for a lighter color variation.
Can be served chilled or at room temperature.
