Juicy, flavorful herb-roasted turkey perfect for holiday celebrations.
Ingredients
1 whole turkey (12–14 lbs)
1/2 cup olive oil or melted butter
3 tbsp fresh rosemary, chopped
3 tbsp fresh thyme, chopped
3 tbsp fresh sage, chopped
4 garlic cloves, minced
2 tsp lemon zest
2 tsp black pepper
1 tbsp kosher salt
1 tsp paprika
Vegetables for roasting (carrots, onions, celery)
Instructions
1. Preheat oven to 325°F (163°C).
2. Remove giblets, rinse turkey, and pat dry.
3. Loosen skin and rub herb mixture under skin and on surface.
4. Place turkey on rack, roast 15 minutes per pound.
5. Baste every 45 minutes.
6. Check doneness with meat thermometer: breast 165°F, thigh 175°F.
7. Rest 20–30 minutes before carving.
Notes
Store leftovers in fridge for up to 4 days or freeze in broth for up to 3 months.
Use kitchen twine for trussing to ensure even cooking.
