Description
A golden, flaky puff pastry plait filled with a rich, creamy mixture of herbed mushrooms, caramelized onions, and melted Gruyère cheese an elegant vegetarian centerpiece perfect for special occasions or cozy dinners.
Ingredients
1 sheet puff pastry, thawed
2 tbsp olive oil
1 tbsp butter
1 small onion, finely chopped
2 garlic cloves, minced
10 oz (280g) mixed mushrooms, sliced
1 tsp fresh thyme leaves
1/2 tsp salt
1/4 tsp black pepper
1 tbsp Dijon mustard
1/4 cup heavy cream or crème fraîche
1 cup shredded Gruyère cheese
1 egg, beaten (for egg wash)
Fresh parsley, for garnish
Instructions
1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a large skillet, heat olive oil and butter over medium heat.
3. Add onions and cook until softened and lightly caramelized, about 5 minutes.
4. Stir in garlic and mushrooms; cook until the mushrooms release moisture and become golden.
5. Season with thyme, salt, and pepper.
6. Stir in Dijon mustard and cream, then simmer for 2–3 minutes until slightly thickened.
7. Remove from heat and stir in shredded Gruyère.
8. Roll out puff pastry on the prepared baking sheet.
9. Spoon the mushroom mixture down the center third of the pastry.
10. Cut diagonal strips along the sides and fold them over the filling to form a plait.
11. Brush with egg wash and bake for 25–30 minutes, until golden brown and puffed.
12. Garnish with fresh parsley and serve warm.
Notes
You can add a handful of spinach or kale for extra greens.
Swap Gruyère for Swiss or Emmental cheese if desired.
This dish can be prepared ahead and baked just before serving for best results.
