This dessert transforms the nostalgic flavors of strawberry shortcake into an elegant cheesecake roll, featuring a delicate sponge cake wrapped around luscious cheesecake and fresh strawberries.

- 4 large eggs
- ¾ cup granulated sugar
- 1 tsp vanilla extract
- ¾ cup all-purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- Powdered sugar (for dusting towel)
- 8 oz cream cheese, softened
- ½ cup powdered sugar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream (cold)
- 1 ½ cups fresh strawberries, chopped
- 2 tbsp sugar (optional, for macerating)
- Crushed golden Oreos or shortbread cookies (for topping)
- Extra whipped cream for garnish (optional)
Instructions
- Preheat oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
- Using a large mixing bowl, beat the eggs for 4-5 minutes until thick and pale.
- Gradually add granulated sugar and beat until light and fluffy. Mix in vanilla extract.
- Sift together flour, baking powder, and salt in another bowl. Fold into the egg mixture carefully.
- Spread the batter evenly in the prepared pan and bake for 10-12 minutes until golden and springs back when touched.
- Turn cake onto a powdered sugar-dusted towel and roll immediately from the short end. Let cool in this rolled position.
- Prepare the cheesecake filling by beating cream cheese, then adding powdered sugar and vanilla.
- Whip the cold heavy cream to stiff peaks and fold it into the cream cheese mixture.
- Once the cake is cool, unroll, spread cheesecake filling, and top with strawberries. Re-roll without the towel, seam-side down.
- Refrigerate for at least 1 hour before serving. Garnish with crushed cookies and extra whipped cream.
Notes
This dessert improves in flavor when made ahead of time. Can be refrigerated for up to 3 days, and the unfilled cake can be frozen for up to 1 month.
