Description

This dessert transforms the nostalgic flavors of strawberry shortcake into an elegant cheesecake roll, featuring a delicate sponge cake wrapped around luscious cheesecake and fresh strawberries.


Ingredients

  • ¾ cup granulated sugar
  • 1 tsp vanilla extract
  • ¾ cup all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • Powdered sugar (for dusting towel)
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream (cold)
  • 1 ½ cups fresh strawberries, chopped
  • 2 tbsp sugar (optional, for macerating)
  • Crushed golden Oreos or shortbread cookies (for topping)
  • Extra whipped cream for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. Using a large mixing bowl, beat the eggs for 4-5 minutes until thick and pale.
  3. Gradually add granulated sugar and beat until light and fluffy. Mix in vanilla extract.
  4. Sift together flour, baking powder, and salt in another bowl. Fold into the egg mixture carefully.
  5. Spread the batter evenly in the prepared pan and bake for 10-12 minutes until golden and springs back when touched.
  6. Turn cake onto a powdered sugar-dusted towel and roll immediately from the short end. Let cool in this rolled position.
  7. Prepare the cheesecake filling by beating cream cheese, then adding powdered sugar and vanilla.
  8. Whip the cold heavy cream to stiff peaks and fold it into the cream cheese mixture.
  9. Once the cake is cool, unroll, spread cheesecake filling, and top with strawberries. Re-roll without the towel, seam-side down.
  10. Refrigerate for at least 1 hour before serving. Garnish with crushed cookies and extra whipped cream.

Notes

This dessert improves in flavor when made ahead of time. Can be refrigerated for up to 3 days, and the unfilled cake can be frozen for up to 1 month.
