Juicy seared chicken thighs glazed in a luscious honey butter sauce with caramelized peaches. A sweet, savory, and summery dinner that feels gourmet yet simple.
Ingredients
6 bone-in, skin-on chicken thighs
2 tbsp olive oil
Salt and black pepper, to taste
2 tbsp unsalted butter
2 tbsp honey
2 garlic cloves, minced
2–3 fresh peaches, sliced
1 tsp fresh thyme (or ½ tsp dried)
½ tsp chili flakes (optional, for heat)
Fresh basil or parsley, for garnish
Instructions
1. Pat chicken thighs dry and season both sides with salt and pepper.
2. Heat olive oil in a large skillet over medium-high heat. Sear chicken skin-side down for 5–6 minutes until golden and crisp. Flip and cook another 6–8 minutes until nearly cooked through. Remove and set aside.
3. In the same skillet, melt butter and stir in honey and garlic. Cook 1 minute until fragrant.
4. Add peach slices and thyme. Cook 3–4 minutes until peaches soften slightly and caramelize.
5. Return chicken to the skillet. Spoon sauce over chicken and simmer 5–7 minutes until chicken reaches 165°F (74°C).
6. Finish with chili flakes if using, garnish with fresh basil or parsley, and serve hot.
Notes
Delicious served with rice, mashed potatoes, or crusty bread.
Swap peaches for nectarines or apricots when in season.
For boneless chicken breasts, reduce cooking time to avoid drying out.
