- 2 medium heads of cauliflower, cut into florets
- 1/4 cup olive oil
- 1/4 cup honey
- 2 tablespoons curry powder
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 2 tablespoons chopped fresh cilantro (for garnish)
Instructions
- Preheat the oven to 425°F (220°C).
- Whisk together the olive oil, honey, curry powder, garlic powder, salt, black pepper, and cayenne pepper in a large mixing bowl.
- Cut the cauliflower heads into florets of even sizes.
- Toss the florets in the marinade until evenly coated.
- Line a baking sheet with parchment paper and spread the marinated cauliflower florets in a single layer.
- Roast in the preheated oven for about 25-30 minutes, stirring halfway through.
- Remove from the oven and garnish with chopped fresh cilantro before serving.
Notes
For added crunch, consider including chopped nuts during roasting. This dish can also be enjoyed in salads or as part of a Buddha bowl.
