Ingredients

  • 4 pieces Chicken Breasts (boneless, skinless)
  • 3 tablespoons Honey (for marinade)
  • 2 tablespoons Lime Juice (freshly squeezed)
  • 1 tablespoon Lime Zest
  • 2 cloves Garlic (minced)
  • 1 teaspoon Ground Cumin
  • to taste Salt
  • to taste Pepper
  • 1 cup Jasmine Rice (or basmati)
  • 2 cups Chicken Broth
  • 2 pieces Avocado (diced)
  • 1 small Red Onion (finely chopped)
  • 1/4 cup Fresh Cilantro (chopped)
  • 1 tablespoon Olive Oil
  • 4 pieces Lime Wedges (for garnish)

Instructions

  1. Prepare the marinade by mixing honey, lime juice, lime zest, minced garlic, ground cumin, salt, and pepper in a bowl. Marinate the chicken for at least 30 minutes in the refrigerator.
  2. Rinse jasmine rice until water runs clear, then combine with chicken broth in a saucepan. Bring to a boil, then reduce heat and simmer for 15-20 minutes. Fluff once done.
  3. Heat olive oil in a grill pan over medium-high heat and cook marinated chicken breasts for 6-7 minutes on each side until cooked through.
  4. In a large bowl, mix cooked rice with diced avocado, red onion, and cilantro. Optionally, drizzle with olive oil and lime juice.
  5. To serve, layer the rice mixture and sliced grilled chicken. Garnish with lime wedges.

Notes

Use fresh ingredients for best flavor. Marinate chicken longer for deeper taste. Adapt to your preferences by substituting proteins or grains.
