Description

Ingredients

12 oz (340 g) spaghetti

1 lb (450 g) Italian sausage (mild or spicy, casings removed)

2 tbsp olive oil (optional)

1 small onion, finely chopped

3 cloves garlic, minced

1 can (28 oz / 800 g) crushed tomatoes

2 tbsp tomato paste (optional)

1 tsp dried oregano

1 tsp dried basil

1/2 tsp red pepper flakes (optional)

Salt and black pepper, to taste

1/4 cup (60 ml) reserved pasta water

Fresh basil or parsley, chopped

Grated Parmesan cheese, for serving


Instructions

1. Cook spaghetti in salted water until al dente. Reserve 1/4 cup of pasta water, then drain.

2. In a large skillet over medium-high heat, cook sausage until browned, breaking it up with a spoon.

3. Add onion and cook until softened, then stir in garlic and cook for 30 seconds.

4. Add crushed tomatoes, tomato paste, oregano, basil, and red pepper flakes. Simmer for 10–15 minutes.

5. Add cooked pasta and reserved pasta water to the sauce. Toss to coat and season with salt and pepper.

6. Top with fresh basil and grated Parmesan. Serve hot with garlic bread or salad.

Notes

For a creamy version, stir in 1/4 cup heavy cream or mascarpone before serving.

Add sautéed mushrooms or bell peppers for extra flavor.

Use spicy Italian sausage for a kick or sweet sausage for a milder dish.
